dormancy or something serious? (2)

My dorstenia foetida and gerrardanthus lobatus have experienced some stem shrinking this winter. Is this simply dormancy, or is it a sign of something worse? In addition, my monadenium magnificum is leafless (this I assume is normal, right?).

Seeing no saucers under pots means you don't water those now and for a couple of months stem can shrink and leaves lost, it is normal for winter time. If you are in doubt inspect the roots closer.
