Was I laughing a while back. My mother-in-law (actually the whole family) just find out today opuntias are edible. Did they spreaded their eyes when I said I know and a nice salad (and much more) could be maid from opuntias.

"How come you never said that?" they asked. My boy asked me if we will eat mama's cacti now???? :D

Well. I think I better go buy me a watch dog Image to guarding my opuntias now. Image

I've always wanted to try pickled Nopales! Pickling them might also help give them a little taste. Throw them in a tortilla or on a burger :P
