What is the best, edible Cereus species?

I know the fruits are edible on lots of the cacti, and I know for a fact that the stems are are edible on at least C. peruvianus.

What is the better cactus to grow in terms of speed of growth, drought resistance, edibility, and hardiness/adaptability to other regions?

Opuntia ficus-indica is the most widely grown for food (vegetable) along with Hylocereus undatus for fruit.

Many others have edible fruits.
All Cacti are succulents, but not all succulents are Cacti
