My question is once these have "scabed" over calused will they grow roots and new bud growth again? These were from a 6' tall specimen that was badly sunburned and wanted to kind of clone it is this possible?

Should do. Some people even graft on stumps and then root them after the scion has taken. Provided there is enough moisture left in the stump to carry it over the rooting process you are OK. After all you can even root tubercles from things like Dolichothele, which are a lot smaller than those.

Keep them in reasonable light (slight shade) but out of full sun to avoid unnecessary water loss until they root and you should be OK.
