Any idea why this is happening? My first guess is too much water, but I'm not sure.

Your plant looks fine to me. It may be a little bit over watered though. However, as long as the epidermis is not torn, there is nothing to worry about. But even if that were to happen, the plant would not be necessarily lost.
As long as you kept the split part dry, most likely the cactus would heal by forming a corky callus tissue scar.

I was able to show it to the grower I bought it from since he was out here last week for the Intercity Show and he said it was underwatered and it would plump back up with some more water. Go figure; that was not what I expected.

Well, that too does make sense. If the ribs fill up, the become fatter and push closer together. That would reduce the "crack" a little. However, be careful, most people actually kill their cacti with too much watering.
I myself have killed many cacti by feeling sorry for them and using the watering can a little too much.
