You can also use Citric Acid crystals instead of vinegar to acidify water. See:-

Citric acid crystals? There is a thing called "limontus " here. Its citric acid used in preservation of food.Its some kind of powder like baking soda or vanilla.

Limontus is usually in small packages (for cooking) if bought on net you can probably get bigger thing for less money. Presumably, that is. Didn't check out. [-(

You can collect AC water too. It should be neutral and free of calcium. That should cut back on the amount of acid you need
