Try grafting in winter? If not, how do I preserve until spring?

The Astrophytum myriostigma "Hakujo" arrived in the mail broken from the stock and with offsets broken off.

I cut the Parodia scopa "inermis" crest off a rotting stock.

It's winter here, so my available stock is all dormant. Do I try to graft or wait until spring? If waiting until spring, how do I keep these (especially the smaller offsets) from drying out before I can get them on a stock?
