Do Echeveria get taller as the grow? I have mine outside in the ground and it gets a fair amount of sunlight. I am just trying to make sure I'm not running into etiolation issues.
My Echeveria I have not been keeping a growth log or anything but it appears to be getting slightly taller and almost 'shedding' off some of its lower leaves.

Yes, they get taller.
Over a few years my E. secunda var. glauca offsets and slowly grows sprawling trunks / stalks for each rosette as the oldest/lowest leaves die off.
This leggy appearance doesn't look tidy for pot cultivation, so I behead the plant every few years and root the cuttings in clusters, a few to a pot, to get nice compact clumps again.
I think most species re-root easily, so this should be a low risk strategy to tidy up older plants, especially species which offset a lot.
If you really want to propagate in numbers, the trunks will regrow, or can even be cut into segments as stem cuttings.
