Hello,
We have had this plant for years, originally bought as Agave Americana but quite clearly not. This year, it has flowered for the first time while we have had it, and I am wondering if anybody has any idea what it is?
the flower spike is about 2.5-3m tall
Any help IDing would be much appreciated

Can you get a close up on the plant itself? That will help.
By the way, we already know that is the first time the plant flowered for you because Agave's die when they flower! Sorry to break the news, but at least they go out with a bang. If that plant has pups you should be able to grow them into new plants.

Aw, that sucks. I knew some species only flowered the once, but i didn't realize it was all of them!

Fair chance that many pubs will develop along the flower stalk.
